Notre histoire

Baking in Dallas since 2004.

We started as a wholesale bakery supplying Dallas restaurants with real French bread. The cafés came later, one neighborhood at a time.

Village Baking Co. began in 2004 with a small crew, a deck oven and the idea that Dallas deserved bread the way it is made in France: long fermentation, real butter, no shortcuts. For years that bread went out the back door to restaurants and grocers. In 2015 we opened the first café on Lower Greenville so the neighborhood could have it too. Knox followed in 2021, Oak Lawn in 2022, Bishop Arts in 2023 and Preston Center in 2025, with Preston & Forest on the way.

Everything still comes from one bakehouse. About 13,000 items a week, sourdough that proofs overnight, quiche and tarts and canelés, driven to the cafés before they open. The small crew we started with has grown into bakers, pastry cooks and café teams across Dallas, and each of them has made the bread better.

The bakery you visit today is not the one we opened in 2004: the recipes have been refined, the team has grown and learned, and each café has found its neighborhood. What has not changed is the standard. Everything is made by hand, from scratch, every day.

Depuis 2004

With thanks to Dallas.

A few of the kind words we have been given over the years. We are grateful for every one.

Craft

Three days to a croissant. Two to a sourdough. Every step by hand, every day, at our Dallas bakehouse.

Passion

Flour, water, salt and yeast are the simplest things in the world. What you do with them is the whole point.

Soul

A boulangerie is a neighborhood thing. Five of them now, each with its own porch, corner or sidewalk.

Come see us.

Five cafés across Dallas, open early.
